Bruschetta Pizza

- Topping: shopping list
- 3/4 cup finely chopped onion shopping list
- 2 cups finely diced tomatoes shopping list
- 3 - 4 tbsp chopped fresh parsley shopping list
- 4 cloves garlic (very finely chopped) shopping list
- 2 tbsp cooking oil (preferably extra virgin olive oil) shopping list
- salt and pepper to taste shopping list
- Crust: shopping list
- 3/4 cup water or beer shopping list
- 1 tsp salt shopping list
- 1/2 tbsp sugar shopping list
- 1 tbsp butter or margarine shopping list
- 2 cups and 2 tbsp white flour shopping list
- 1 tsp yeast shopping list
- cornmeal shopping list
How to make it
- Mix onion and tomatoes together and let set in a wire strainer for about 2 hours to drain excess water. Place in small bowl and mix in rest of ingredients. This tastes best if it is let set in the fridge for a few hours ahead of time as well because the flavors develop.
- Put all the crust ingredients into a bread machine and turn it to the dough setting. When dough is ready to be used, stretch it to a circle roughly 14 inches in diameter. Pat dough with cornmeal and place cornmeal side down on a baking sheet or pizza pan that is ungreased.
- Spread topping all over the crust evenly and then top with shredded mozzarella to your own preference. Bake at 400 for 25 - 30 minutes until crust is golden and mozzarella cheese is melted and bubbly. Serve immediately.
