How to make it

  • Mix onion and tomatoes together and let set in a wire strainer for about 2 hours to drain excess water. Place in small bowl and mix in rest of ingredients. This tastes best if it is let set in the fridge for a few hours ahead of time as well because the flavors develop.
  • Put all the crust ingredients into a bread machine and turn it to the dough setting. When dough is ready to be used, stretch it to a circle roughly 14 inches in diameter. Pat dough with cornmeal and place cornmeal side down on a baking sheet or pizza pan that is ungreased.
  • Spread topping all over the crust evenly and then top with shredded mozzarella to your own preference. Bake at 400 for 25 - 30 minutes until crust is golden and mozzarella cheese is melted and bubbly. Serve immediately.
