Baigun Ka Kaccha Bharta

- 2 Lbs eggplants - (use Indian eggplants) shopping list
- Hara masala shopping list
- *1 Medium Onion ( chopped finely) shopping list
- *2 Medium jalapeno peppers (seeded and finely chopped) shopping list
- * cup cilantro (finely chopped) shopping list
- * green onions (finely chopped) shopping list
- 1 tsp crushed red pepper shopping list
- salt to taste shopping list
- 3 tbsp clarified butter or desi ghee shopping list
How to make it
- Preheat broiler to 400 degrees.
- Put eggplants on the top rack and cook for about 20 minutes, turn side and cook another 20 minutes. Check if the skin is charred from all sides.
- This could be done on stovetop if you have a gas burner (be sure to line the bottom of the stove with aluminium foil for easu clean up later on).
- Turn off the broiler, take out the eggplants and let cool in a colander. When cold peel off the skin, and squeeze any juice out. Mash (prefrably in a mortar and pestle) or cut eggplant into very small pieces.
- Add hara masala (onions, cliantro and green peppers), red pepper and salt.
- Heat clarified butter or ghee in a pan, when hot add the eggplant mixture and just heat through, do not cook. Serve with pita, roti and yogurt raita.
