Fresh Tomato With Linguini Recipe
Perfect for a quick dinner. You could easily add chicken to this to incorporate protein, carbs and omega 3's all in one great dish!

Ingredients
  • 10 ripe roma tomatoes (or more if you like tons of tomatoes), chopped into small cubes (Leave skin on)
  • 1 6 ounce can pitted black olives, sliced
  • 1/2 cup fresh basil, chopped
  • 1/4 to 1/2 cup Romano cheese, grated
  • Kosher salt to taste
  • Garlic powder to taste
  • Fresh ground pepper to taste
  • 1/3 to 1/2 cup extra virgin olive oil
  • 1 pound linguine (I like wheat but anything is good!)

Directions
  1. Preheat oven to 350 degrees
  2. In a baking dish, combine tomatoes, olives, basil, Romano cheese, salt, garlic powder and pepper
  3. Drizzle olive oil over the top
  4. Bake for 30 minutes
  5. Boil linguine according to package instructions while tomato mixture is baking
  6. Drain linguine and place into serving dish
  7. Pour baked tomato mixture over linguine, mix and serve
