How to make it

  • Combine rhubarb, 1/4 cup butter and brown sugar in small bowl and mix with fork until blended. Put in bottom of 12 large greased
  • muffin cups.
  • Beat 1/3 cup butter, sugar and egg until fluffy. Sift flour, baking powder, salt and nutmeg. Add to butter-sugar mixture
  • alternately with milk. Stir just to blend then spoon on top of
  • rhubarb.
  • Bake in preheated 350 degree oven for 20-25 minutes. Invert
  • pan on rack and let stand for 3 minutes. Remove pan. Serve warm.
