Rhubarb Sticky Muffins

- 1 cup chopped rhubarb shopping list
- 1/4 cup butter shopping list
- 1/2 cup brown sugar shopping list
- 1/3 cup butter shopping list
- 1/3 cup sugar shopping list
- 1 egg shopping list
- 1 1/2 cup flour shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 1/2 tsp. nutmeg shopping list
- 1/2 cup milk shopping list
How to make it
- Combine rhubarb, 1/4 cup butter and brown sugar in small bowl and mix with fork until blended. Put in bottom of 12 large greased
- muffin cups.
- Beat 1/3 cup butter, sugar and egg until fluffy. Sift flour, baking powder, salt and nutmeg. Add to butter-sugar mixture
- alternately with milk. Stir just to blend then spoon on top of
- rhubarb.
- Bake in preheated 350 degree oven for 20-25 minutes. Invert
- pan on rack and let stand for 3 minutes. Remove pan. Serve warm.
