Pineapple Cheesecake Squares

- Crust: shopping list
- 1/2 cup all purpose flour shopping list
- 3 tablespoons sugar shopping list
- 1/4 teaspoon salt shopping list
- 1/4 cup cold butter shopping list
- Filling: shopping list
- 1 8oz can crushed pineapple shopping list
- 1 8oz package cream cheese-softened shopping list
- 3 tablespoons sugar shopping list
- 1 tablespoon sugar shopping list
- 1 egg-lightly beaten shopping list
- 1 cup milk shopping list
- 1 teaspoon vanilla extract shopping list
- ground cinnamon shopping list
How to make it
- In a bowl,combine flour,sugar,and salt. Cut in butter until mixture is crumbly.
- Press into the bottom of an ungreased 8" square baking dish.
- Bake at 325 degrees for 12 minutes. Cool on wire rack.
- Filling:
- Drain pineapple,reserving juice. Set aside.
- In a large mixing bowl,beat cream cheese,sugar,and flour until smooth.
- Add egg. Beat on low until just combined.
- Add pineapple juice. Gradually add milk and vanilla.
- Sprinkle pineapple over crust.
- Pour filling over pineapple. Sprinkle with cinnamon.
- Bake at 325 degrees for 1 hour or until set.
- Cool in wire rack for 1 hour then store in refrigerator until completely cold.
- Cut into squares and serve.
