GLAZED ORANGE CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984.

Ingredients
  • 1 cup butter
  • 2 cups granulated sugar
  • 5 eggs
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons grated orange rind
  • 3 cups cake flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • Glaze:
  • 1/4 cup butter
  • 2/3 cup granulated sugar
  • 1/3 cup orange juice

Directions
  1. Preheat oven to 350.
  2. Cream butter and sugar until light and fluffy then beat in eggs one at a time.
  3. Beat in vanilla and orange rind.
  4. Sift together flour, baking powder and salt.
  5. Add to batter alternately with milk ending with flour.
  6. Spoon into a greased and floured tube pan then bake one hour.
  7. Cool on a cookie sheet or wire rack for two minutes.
  8. Heat glaze ingredients in small saucepan until sugar just dissolves.
  9. Pour hot glaze over hot cake and allow cake to cool thoroughly in tube pan before removing.
