Turkey Tenderloins And Apricot Sauce Recipe
Nicely seasoned turkey tenderloins. Great on a salad as leftovers!

Ingredients
  • 1 pkg(11/4lb.)turkey tenderloins
  • 1/4 tsp each salt and fresh ground black pepper
  • Apricot Sauce
  • 2/3c apricot preserves
  • 2 cloves garlic,minced
  • 2Tbs. dijon mustard
  • 2 Tbs reduced -sodium soy sauce

Directions
  1. Heat oven to 400. You'll need a roasting pan lined with foil and coated with non-stick spray
  2. Season turkey tenderloins with salt andpepper;place in prepared pan.
  3. In a small bowl,combine sauce ingredients. Mix well;spoon some
  4. over turkey. Roast 35-40 mins.,basting frequently with the sauce,until an instant-read thermometer inserted into the thickest part registers at least 160.
  5. Let turkey rest for 10 mins before cutting it crosswise into 1/2" thick slices.
