Healthy vegetable casserole. This is always a hit at home and pot luck dinners. If you want to add meat, it's up to you.

Ingredients
  • 8 - 10 small new potatoes
  • 10 baby gourmet carrots, washed
  • 2 celery ribs, gently peel strings and cut into 1 inch pieces
  • 1 small cauliflower, broken into florets
  • 4 asparagus spears, trimmed and cut into 1 inch pieces
  • a handful of fresh green beans, ends snipped off and cut into 1 inch pieces
  • 3 Tablespoons butter
  • 3 Tablespoons all-purpose flour
  • 2 cups milk, 2% or homogenized
  • salt and pepper to taste
  • a pinch of cumin (optional)
  • 3/4 cup (3 ounces) shredded Cheddar or Tex Mex cheese
  • chopped fresh parsley / cilantro

Directions
  1. Steam vegetables until tender but still crisp.
  2. Arrange vegetables in a buttered 2 quart casserole.
  3. Preheat oven to 350°F.
  4. To make sauce, melt butter in medium saucepan over medium heat.
  5. Stir in flour until smooth.
  6. Gradually stir in milk.
  7. Cook until thickened, stirring constantly.
  8. Season to taste with salt and pepper.
  9. Add cheese, stirring until cheese is melted.
  10. Pour sauce over vegetables and sprinkle with chopped parsley or cilantro.
  11. Bake for 25 minutes or until heated through.
  12. Makes enough to serve 4 to 6 people as a side dish.
