Veggie Enchiladas Recipe

I adapted this recipe from one my Mom makes all the time. This is really filling and delicious.

Ingredients
  • 1 1/2 tablespoons butter (or oil)
  • 1/4 cup diced onion
  • 1/2 pound veggie ground beef crumbles
  • 1 can of cream of mushroom
  • 1 can enchilada sauce (or tomato sauce plus dry enchilada spice)
  • 2 tablespoons green chilies
  • 8 corn tortillas (see below)
  • 3 cups shredded cheese (or mixture shredded and mozzarella)

Directions
  1. Sauté onions and veggie beef in butter (or oil) until the veggie beef is browned.
  2. Add cream of mushroom, enchilada sauce, and green chilies then simmer.
  3. Dip tortillas in oil (not necessary depending on the tortillas).
  4. Add about a tablespoon of cheese & roll.
  5. Place rolled tortillas on the sauce and beef mixture.
  6. Sprinkle the remaining cheese on top of the tortillas, cover, and simmer until melted.
