Polenta Sausage Ragout

- 1 16 oz tube of polenta, sliced into 1/2 inch medalians shopping list
- 2 med zucchinis, chopped shopping list
- 1 cup of marinated articokes shopping list
- 1 tbsp cooking oil shopping list
- 1 lb sweet Italian sausage, sliced shopping list
- 1 c mushrooms, sliced shopping list
- 1 c vine-riped tomatoes, chopped shopping list
- 1 clove of garlic, minced shopping list
- 1 tsp. dried basil shopping list
- 1 tsp dried oregano shopping list
- parmesan cheese shopping list
- salt and pepper shopping list
How to make it
- Greased baking sheet and add polenta and zucchini.
- Brush with oil; sprinkle with salt and pepper.
- Broil 4 to 5 inches from heat for 8 to 10 minutes or until polenta is lightly browned and zucchini is tender. Turn once.
- In large skillet cook and break up sausage over medium heat until sausage begins to brown. Drain off fat.
- Add garlic, mushrooms, tomatoes, and herbs to skillet; cook for 5 minutes, until meat is no longer pink.
- Add articokes, zucchini, and polenta until heated through.
- Sprinkle with cheese and serve.
