Prepared polenta is readily available in most supermarkets these days. This simple recipe only takes 20 minutes to make and is a quick and yummy for any busy weeknight. Serve with your favourite salad and bread.

Ingredients
  • 1 16 oz tube of polenta, sliced into 1/2 inch medalians
  • 2 med zucchinis, chopped
  • 1 cup of marinated articokes
  • 1 tbsp cooking oil
  • 1 lb sweet Italian sausage, sliced
  • 1 c mushrooms, sliced
  • 1 c vine-riped tomatoes, chopped
  • 1 clove of garlic, minced
  • 1 tsp. dried basil
  • 1 tsp dried oregano
  • Parmesan cheese
  • salt and pepper

Directions
  1. Greased baking sheet and add polenta and zucchini.
  2. Brush with oil; sprinkle with salt and pepper.
  3. Broil 4 to 5 inches from heat for 8 to 10 minutes or until polenta is lightly browned and zucchini is tender. Turn once.
  4. In large skillet cook and break up sausage over medium heat until sausage begins to brown. Drain off fat.
  5. Add garlic, mushrooms, tomatoes, and herbs to skillet; cook for 5 minutes, until meat is no longer pink.
  6. Add articokes, zucchini, and polenta until heated through.
  7. Sprinkle with cheese and serve.
