Italian Sole for Your Soul

- 2 1/2 lbs fillet of sole shopping list
- 1/4 c olive oil shopping list
- 1 clove garlic flattened shopping list
- 1/4 c diced onion shopping list
- 3 tbl diced green pepper shopping list
- 1/4 c diced celery shopping list
- 1 1/2 c crushed tomatoes shopping list
- 1/4 c sherry wine shopping list
- 1 bay leaf shopping list
- 2 tbl diced prosciutto shopping list
- 3 tbl grated parmesan cheese shopping list
- 1 c bread crumbs shopping list
- 3 tbl butter shopping list
- salt and freshly ground pepper shopping list
How to make it
- Heat the oil and brown the garlic-discard garlic
- Saute diced onions, peppers and celery for 5 minutes
- Add tomatoes, wine, bay leaf, salt and pepper
- Place sauce in a casserole dish with the fish on top
- Mix the prosciutto, cheese, breadcrumbs together and sprinkle on top of the filets
- Break up the butter and put on top of the fish
- Bake for 20 minutes at 375 degrees
