I have making this dish for - well forever. It was one of the all time favorites from Carbone's Restaurant in Hartford, Ct.

Ingredients
  • 2 1/2 lbs fillet of sole
  • 1/4 c olive oil
  • 1 clove garlic flattened
  • 1/4 c diced onion
  • 3 tbl diced green pepper
  • 1/4 c diced celery
  • 1 1/2 c crushed tomatoes
  • 1/4 c sherry wine
  • 1 bay leaf
  • 2 tbl diced prosciutto
  • 3 tbl grated Parmesan cheese
  • 1 c bread crumbs
  • 3 tbl butter
  • Salt and freshly ground pepper

Directions
  1. Heat the oil and brown the garlic-discard garlic
  2. Saute diced onions, peppers and celery for 5 minutes
  3. Add tomatoes, wine, bay leaf, salt and pepper
  4. Place sauce in a casserole dish with the fish on top
  5. Mix the prosciutto, cheese, breadcrumbs together and sprinkle on top of the filets
  6. Break up the butter and put on top of the fish
  7. Bake for 20 minutes at 375 degrees

Filet of sole might just be my favorite fish! But I love almost all fish. This is a spectacular dish and as soon as I can get sole, I will make it. I am not a big eater, but a very choosy one and I choose this to save, print and send you praise and a 5.joymarie
