Beans with Mint

- 1/3 cup extra virgin olive oil shopping list
- 3 tablespoons red wine vinegar shopping list
- 2 cloves garlic shopping list
- ½ cup fresh mint, minced shopping list
- 1 teaspoon fresh oregano, chopped, or ½ teaspoon dried oregano shopping list
- salt and freshly ground pepper, to taste shopping list

- 1 pound tender green beans shopping list
- 1 tablespoon olive oil shopping list
How to make it
- In a 9- by 12-inch non-metal dish, whisk dressing ingredients together and set aside.
- Trim beans, put into a large pot and cover with cold water. Add olive oil. Bring to a boil, and boil till al dente, about 10 minutes. Beans should still have some bite to them.
- Drain. Immediately add to dressing, turning to coat them. Cover dish and let beans marinate for several hours at room temperature before serving.
