Another of my favorite recipes adapted from Cooking Light, in Superfast Suppers. The original recipe calls for pre-cooked chicken strips...but I use my own chicken breast, and my own stock. Only 360 calories per 1 1/2 cup serving.

If you want to make it a bit easier on yourself:
Use 2.5 cans reduced-sodium fat-free chicken broth instead of the 4 cups homemade stock. It will increase the yield just a bit, but won't hurt the flavor any.
Also many stores sell packaged fresh baby spinach in 6 or 7 oz packages in the salad section.
And, one more thing, you can buy chicken breast that is skinless and grilled/already cooked, usually made by Tyson or the like. That cuts down the prep/cook time of this dish considerably.
Frozen tortellini will work as well as the fresh stuff. I like the fresh but I find that it can be more expensive.
