This is a really tasty way to use buttercup squash (they're like pumpkins, only smaller and dark green skin with bright orange flesh. I can get them in New Zealand, but not England). This is better than canned soup by far!

Ingredients
  • 1 butternut squash (approx 1kg) - cut into rind-less chunks
  • 1 large onion
  • 1 large carrot
  • 1 pint boiled water
  • chicken/veg stock
  • cumin
  • cinammon
  • chilli powder (optional)

Directions
  1. Find a large saucepan/soup-pan
  2. Chop up the butternut squash into chunky cubes. I cut the skin off. (It's waaay easier to buy it ready chopped!)
  3. Chop up the onion and carrot.
  4. Add water and stock to the pan.
  5. Add all the veggies.
  6. Bring to boil then let simmer.
  7. Add the spices (- a teaspoon of each, or as much/little as you want).
  8. Simmer for at least 25-30mins until veggies are soft.
  9. Allow to cool slightly and blend with hand blender in the pan.
  10. Serve and enjoy!
  11. (can be frozen into small bags if you don't use it all)

A freind gave me a couple of butterCup squash...I will make this soup with them...sounds good...Obviously similar to butterNut squash soup which I have made several times, and enjoy immensley..I believe that I obtained the recipe from mystic river1..Thanks for the post Philfull...I was hoping that I would be able to utilize these butterCup squash in such a way...Cheers,,,Stewie
