Buttercup Soup

- 1 butternut squash (approx 1kg) - cut into rind-less chunks shopping list
- 1 large onion shopping list
- 1 large carrot shopping list
- 1 pint boiled water shopping list
- chicken/veg stock shopping list
- cumin shopping list
- cinammon shopping list
- chilli powder (optional) shopping list
How to make it
- Find a large saucepan/soup-pan
- Chop up the butternut squash into chunky cubes. I cut the skin off. (It's waaay easier to buy it ready chopped!)
- Chop up the onion and carrot.
- Add water and stock to the pan.
- Add all the veggies.
- Bring to boil then let simmer.
- Add the spices (- a teaspoon of each, or as much/little as you want).
- Simmer for at least 25-30mins until veggies are soft.
- Allow to cool slightly and blend with hand blender in the pan.
- Serve and enjoy!
- (can be frozen into small bags if you don't use it all)
