How to make it

  • Find a large saucepan/soup-pan
  • Chop up the butternut squash into chunky cubes. I cut the skin off. (It's waaay easier to buy it ready chopped!)
  • Chop up the onion and carrot.
  • Add water and stock to the pan.
  • Add all the veggies.
  • Bring to boil then let simmer.
  • Add the spices (- a teaspoon of each, or as much/little as you want).
  • Simmer for at least 25-30mins until veggies are soft.
  • Allow to cool slightly and blend with hand blender in the pan.
  • Serve and enjoy!
  • (can be frozen into small bags if you don't use it all)

    A freind gave me a couple of butterCup squash...I will make this soup with them...sounds good...Obviously similar to butterNut squash soup which I have made several times, and enjoy immensley..I believe that I obtained the recipe from mystic river1..Thanks for the post Philfull...I was hoping that I would be able to utilize these butterCup squash in such a way...Cheers,,,Stewie
