easy chicken pot pie

- 3 boneless skinless chicken breasts or thighs chopped in to bite sized pieces shopping list
- 2 tlbs vegetable oil shopping list
- 3 cups vegetables (i use either fresh or frozen, if fresh you will want to steam before adding or they will not cook through) shopping list
- 2 cans fat free cream of chicken soup shopping list
- 1/4 tsp dried thyme shopping list
- 1/4 tsp dried rosemary shopping list
- 1/4 tsp dried sage shopping list
- salt and pepper to taste shopping list
- 1 roll of low fat pie dough shopping list
- salt and pepper shopping list
How to make it
- preheat oven to 375
- saute chicken in vegetable oil until no longer pink
- season with dried herbs
- add 2 cans of soup
- add about 1 can of water, you want this thicker than a gravy but thinner than a porridge
- add vegetables
- add salt and pepper to taste
- simmer for about 15 minutes
- place in baking dish and top with pastry
- poke a few holes
- bake until golden brown

This is a very similar recipe that I made up for my family. They just love it. I've used canned chicken, left over turkey, homemade pie crust and Pillsbury refrigerated pie crust. I also use 1 can of cream of potato soup and 1 can cream of chicken...more
