Easy Chicken Pot Pie Recipe
this is soo easy to make. can make it even easier by using frozen vegetables (defrosted) to cut down on some time.

Ingredients
  • 3 boneless skinless chicken breasts or thighs chopped in to bite sized pieces
  • 2 tlbs vegetable oil
  • 3 cups vegetables (i use either fresh or frozen, if fresh you will want to steam before adding or they will not cook through)
  • 2 cans fat free cream of chicken soup
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried sage
  • salt and pepper to taste
  • 1 roll of low fat pie dough
  • salt and pepper

Directions
  1. preheat oven to 375
  2. saute chicken in vegetable oil until no longer pink
  3. season with dried herbs
  4. add 2 cans of soup
  5. add about 1 can of water, you want this thicker than a gravy but thinner than a porridge
  6. add vegetables
  7. add salt and pepper to taste
  8. simmer for about 15 minutes
  9. place in baking dish and top with pastry
  10. poke a few holes
  11. bake until golden brown

This is a very similar recipe that I made up for my family. They just love it. I've used canned chicken, left over turkey, homemade pie crust and Pillsbury refrigerated pie crust. I also use 1 can of cream of potato soup and 1 can cream of chicken.
