Creamy Ranch Potatoes Recipe

Ingredients

2 lbs. small red potatoes, quartered

8 oz. cream cheese, softened

1 can cream of potato soup

1 envelope buttermilk ranch dry salad dressing mix

Directions

1. Place quartered potatoes in crock pot.

2. In small bowl, combine cream cheese and ranch mix. Stir in soup.

3. Add to potatoes.

4. Cook on low 7-9 hours or high 3 1/2 to 4 1/2 hours.

I just wondered how it would turn out if you replaced it with some very finely shredded mozzarella cheese? I know it would be completely different but the condensed potato soup is like a roux of sorts and the cream cheese is just too rich for me but I like the combinations of the potatoes and ranch dressing.
