How to make it

  • Fry the shallot in a big cast iron pot in oil and butter until tender.
  • Add the washed and shredded lettuce, allow this to reduce.
  • Add the peas and stock and gently simmer for 20 minutes.
  • Add salt, pepper and some sugar.
