How to make it

  • break pasta in half using your hands and cook according to package until al dente
  • heat olive oil in large non stick pan and add snow peas, yellow squash, and thyme.
  • stir fry for a few minutes leaving veggies slightly crunchy
  • move veggies to sides of the pan
  • drain pasta and add to middle of the pan
  • add butter or margarine to pasta and stir leaving the veggies to the side as to not overcook them
  • increase the heat and stir; cook the pasta until it is a bit stiff
  • season with salt and pepper to taste
  • let pasta and veggies cool slightly
  • sprinkle with parmesan when ready to serve or pass around the table so people add as much as they like
