This can be whipped up in no time and is always a big hit. Can be used as a main dish or side.

Ingredients
  • 2 packages gnocchi
  • 1 28 ounce can diced tomatoes
  • 4 large garlic cloves minced
  • 1 tsp red pepper flakes
  • 3 Tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp salt and pepper (or to taste)
  • 1/4 cup parmesan cheese, grated

Directions
  1. Prepare gnocchi according to package directions
  2. Heat oil in heavy skillet
  3. Add garlic and red pepper flakes.
  4. Saute until fragrant (About 2 minutes)
  5. Add tomatoes, salt, pepper, and basil.
  6. Simmer for 5 minutes.
  7. Add drained gnocchi, and parmesan cheese.
  8. Heat through.
  9. Yum.
