Wild Rice Stuffing For Cornish Hens Recipe

Ingredients

1 (6 oz) pkg white & wild rice stuffing mix

1/4 cup dry sherry

3 tbsp butter

1/4 lb fresh mushrooms, sliced

1/2 cup finely diced celery

1/4 cup toasted slivered almonds

2 tbsp green onion tops

1/8 tsp pepper

Directions

Prepare rice according to package directions, but substitute dry sherry for 1/4 cup of the water. In another skillet ( 8"), over medium heat, add 3 tablespoons of butter and cook mushrooms and celery until tender, about 5 minutes.

Stir mushroom mixture into rice and add almonds, green onions and pepper.
