How to make it

  • Melt margarine, sugar, and honey together in a pan. Leave to cool slightly.
  • Mix dry ingredients (except Chocolate) in a bowl.
  • Add the melted mixture, mix well, and allow to cool completely.
  • Mix in chocolate chips.
  • Use a couple of spoons to form the batter into tablespoon-sized balls, place 2" apart on a greased or parchment-papered baking sheet. Flatten slightly.
  • Bake at 350°F for 10 minutes. Cool slightly then remove to a cooling rack.

    Honey, oats and coconut? Yup, this is goin' in my "to try" file...I rarely eat cookies, but I'd have a few of these, no doubt. I'll use butterscotch or cinnamon chips, though, instead of chocolate if you don't mind. ;)
