Cowboy casserole

This is a variation of the popular Shepard's Pie, it is very simple and cheap, and the kids and the hubby all love it!
Ingredients
- 2 pounds ground beef, browned. shopping list
- 1 large can or jar spaghetti sauce of choice. shopping list
- mashed potatoes (boxed or homemade) prepared. Works best if they are slightly thinner than normal. shopping list
- 1 16 oz. bag shredded cheddar cheese (I found that the fancy shredded works best). shopping list
- You may also want to try: Canned veggies of your choice, diced onion (fried with the beef is really good), jalapeño or anything else you think might taste good!!! shopping list
How to make it
- Preheat oven to 375*
- Mix browned ground beef with spaghetti sauce in pan, simmer until hot (this is when I would normally prepare the potatoes). This is also when you add any extras to the recipe.
- Pour mixture into the bottom of a rectangular cake pan.
- Add the mashed potatoes on top in a flat layer.
- Add entire contents of the bag of cheese.
- Place the pan in the oven and bake for approximately 10-15 minutes, or until the cheese is bubbly, and golden.
- Let cool, slice into cake size pieces and serve! No need for sides...you have it all in one dish!
