Cowboy Casserole Recipe
This is a variation of the popular Shepard's Pie, it is very simple and cheap, and the kids and the hubby all love it!

Ingredients
  • 2 pounds ground beef, browned.
  • 1 large can or jar Spaghetti sauce of choice.
  • Mashed potatoes (boxed or homemade) prepared. Works best if they are slightly thinner than normal.
  • 1 16 oz. bag shredded cheddar cheese (I found that the fancy shredded works best).
  • You may also want to try: Canned veggies of your choice, diced onion (fried with the beef is really good), jalapeƱo or anything else you think might taste good!!!

Directions
  1. Preheat oven to 375*
  2. Mix browned ground beef with spaghetti sauce in pan, simmer until hot (this is when I would normally prepare the potatoes). This is also when you add any extras to the recipe.
  3. Pour mixture into the bottom of a rectangular cake pan.
  4. Add the mashed potatoes on top in a flat layer.
  5. Add entire contents of the bag of cheese.
  6. Place the pan in the oven and bake for approximately 10-15 minutes, or until the cheese is bubbly, and golden.
  7. Let cool, slice into cake size pieces and serve! No need for sides...you have it all in one dish!
