Parmesan Puffs

- 4 tablespoons softened butter shopping list
- 1/8 teaspoon nutmeg shopping list
- 1/8 teaspoon salt shopping list
- 2 cups all-purpose flour shopping list
- 4 eggs shopping list
- 5 ounces freshly-grated parmesan cheese shopping list
How to make it
- Pre-heat the oven to 350-degrees F.
- Boil 2 cups of water and add the butter, nutmeg and salt.
- As the butter is melting, lower the heat and add the flour.
- Stir well to incorporate until it forms a ball.
- Remove from the heat entirely.
- Let the mixture cool a bit.
- Add the eggs, one at a time, stirring each one in thoroughly before adding the next one.
- Stir in the cheese.
- Knead the dough until it is smooth and elastic.
- Divide the dough into walnut-sized bits and roll those bits in your hands into balls.
- Lay the dough balls on a parchment-lined baking sheet.
- Bake for 20 minutes, or until they are puffy, and lightly golden.
- This recipe make 36 puffs (3 dozen).
