Crab-Stuffed Cucumbers Recipe
I serve these on a plate that is laid upon a frozen tray of ice, to keep it nice and cold for serving. Put an absorbent cloth under the tray.

Ingredients
  • 6 ounces Whipped Cream Cheese
  • 2 teaspoons Worcestershire Sauce
  • 1/4 teaspoon garlic powder
  • 8 ounces Imitation Crab meat
  • 1/4 cup Shredded Sharp Cheddar Cheese
  • 2 large Cucumbers
  • Toothpicks

Directions
  1. Blend the cream cheese, W-shire sauce and garlic powder.
  2. Add the crab meat and cheddar.
  3. Peel the cucumbers, or stripe them (leaving a strip of peel in place in a pattern).
  4. Cut the cucumbers in half THE LONG WAY, and remove all the seeds.
  5. Spoon the filling into the cucumber boats.
  6. Wrap the filled boats in plastic wrap and refrigerate overnight.
  7. Just before serving, unwrap the boats and cut them into 1/2-inch slices.
  8. Serve with toothpicks to pick them up.
  9. Be sure to keep them quite cold when you serve them. It pays off.

Alterations


You can also use amall pickling cucumbers for this, and not cut the 1/2-inch slices, but leave them in their "boat" form for serving.
