Silverton Spinach Salad

This is one of our favorite salads. We eat it year-round with just about any kind of main dish.
Ingredients
- 6 cups triple-washed baby spinach shopping list
- 6 ounces swiss cheese, julienned shopping list
- 6 ounces Cheddar, julienned shopping list
- 2 cups seedless grapes, halved shopping list
- Dressing: shopping list
- 1/4 cup cider vinegar shopping list
- 1/2 cup vegetable oil shopping list
- 2 tsp. Dijon mustard shopping list
- 2 tsp. packed brown sugar shopping list
- 4 slices bacon, fried crisp, drained and crumbled shopping list
- 2 Tbs. sliced green onions shopping list
How to make it
- To prepare dressing, whisk together vinegar, oil, mustard and brown sugar. Stir in onion. Refrigerate.
- In a large bowl, combine spinach, cheeses and grapes. Toss with dressing, but not til just before you serve. Sprinkle bacon crumbles over all.
