This easy to make side dish compliments many meals. I make it to go with burgers. My family loves it!

Ingredients
  • 1 tablespoon butter or preferred frying method
  • 1 can diced tomatoes
  • 1 can black eyed peas, rinsed
  • 1 cup frozen corn or fresh shucked from cob
  • 3-4 cloves garlic, minced
  • 1/2 small onion diced
  • handful of Italian parsley
  • Oregano
  • Salt
  • Pepper
  • Shredded Mozzarella (No Fat doesn't work!) or Fresh mozz cut into strips

Directions
  1. Dice onion and garlic, set aside
  2. Heat saute pan with butter just until butter lightly bubbles
  3. Add onion and saute for 3-4 minutes
  4. Add frozen corn, tomatoes and garlic
  5. Stir mix until corn is warmed
  6. Add black eyed peas, stir mixture and saute until warmed
  7. Add seasonings to taste
  8. Lastly, dribble light covering of cheese on top, mix through and add another light covering to melt over the top
  9. Sprinkle with parsley
