Motzy Black Eyed Peas

This easy to make side dish compliments many meals. I make it to go with burgers. My family loves it!
Ingredients
- 1 tablespoon butter or preferred frying method shopping list
- 1 can diced tomatoes shopping list
- 1 can black eyed peas, rinsed shopping list
- 1 cup frozen corn or fresh shucked from cob shopping list
- 3-4 cloves garlic, minced shopping list
- 1/2 small onion diced shopping list
- handful of Italian parsley shopping list
- oregano shopping list
- salt shopping list
- pepper shopping list
- Shredded Mozzarella (No Fat doesn't work!) or Fresh mozz cut into strips shopping list
How to make it
- Dice onion and garlic, set aside
- Heat saute pan with butter just until butter lightly bubbles
- Add onion and saute for 3-4 minutes
- Add frozen corn, tomatoes and garlic
- Stir mix until corn is warmed
- Add black eyed peas, stir mixture and saute until warmed
- Add seasonings to taste
- Lastly, dribble light covering of cheese on top, mix through and add another light covering to melt over the top
- Sprinkle with parsley
