Blueberry Enchiladas Recipe
BLUEBERRY ENCHILADAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pusey Estate in Plano Texas in 1991.

Ingredients
  • 21 ounce can blueberry pie filling
  • 8 flour tortillas
  • 1 teaspoon allspice
  • 1/3 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup water

Directions
  1. Spoon fruit filling evenly down center of each tortilla then sprinkle with cinnamon.
  2. Roll up and place seam side down in a lightly greased baking dish.
  3. Bring butter and next three ingredients to a boil in a medium saucepan.
  4. Reduce heat and simmer stirring constantly for 3 minutes.
  5. Pour over enchiladas then allow to stand 30 minutes.
  6. Bake at 350 for 20 minutes.
  7. Serve warm with whipped cream and fresh blueberries over top.
