How to make it

  • In a large saute pan, heat the olive oil. Add the onion and saute for 4-5 minutes until tender. Add the garlic and cook briefly. Add the bay leaf and tomatoes and cook for two minutes. Pour in the chicken stock and dry sherry. Cook over high heat until slightly reduced, about 5 minutes. Add the drained beans and shrimp. Cook for 2 minutes, stirring often until shrimp are cooked through. Season with salt and pepper and serve with rice.

    I thought this was quite bland, but the basic recipe was worth tweeking. I added lots of fresh oregano & rosemary, as well as italian seasoning, sea salt and fresh cracked pepper. It was very good then; served it over whole wheat pasta. Yum.
