Chicken and eggs is a combination very common in my cooking. I love taste of fried rice and omelettes. This recipes makes 2 large and really filling omelettes. Great anytime!

Ingredients
  • 2 c cooked rice
  • 200 g boneless chicken thigh. cubed
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1/4 c mushrooms, chopped
  • 1 Tbsp butter
  • 1 Tbsp vegetable oil
  • 1 Tbsp soya sauce
  • 1 tsp sugar
  • salt and pepper to taste
  • 1 Tbsp ketchup and
  • tomato ketchup garnish
  • 4 eggs, beaten
  • 1/4 c milk

Directions
  1. Heat the oil in a large saucepan.
  2. Add chicken, onion, mushrooms and green pepper to stir-fry until chicken is cooked.
  3. Add rice and stir constantly.
  4. Add soya sauce, tomato ketchup and sugar
  5. Stir fry lightly untl the rice has absorbed the liquids.
  6. Salt and pepper to taste and set aside.
  7. Beat egg, and milk together. Season to taste.
  8. Heat the oil and butter in a pan, make omelet by swirling pan. Remove and repeat. Can get 2 large omelettes or 4 smaller omelettes.
  9. Spoon fried chicken rice inside omelette, roll and seal.
  10. Top with some ketchup and serve.
