Cheesy Corn Pudding Recipe
This dish adds a cheesy creamy flavor to the ordinary corn pudding. My family can't get enough of it!

Ingredients
  • 8 oz grated sharp cheese
  • 1 can creamed corn
  • 1 can white or yellow kernel corn (undrained)
  • 1 stick unsalted butter
  • 3 eggs
  • 1 box Jiffy corn muffin mix
  • 8 ounces fat-free sour cream

Directions
  1. Mix all ingredients.
  2. Pour into 2 quart round glass baking dish.
  3. Bake at 375 degrees 45 - 60 minutes until lightly browned on top.
  4. Fort inserted will not come out clean because of the cheese.
  5. Top each serving with a dollop of butter, or serve "as is."

I wasn't hungry til I read this - now I am!

We don't have corn muffin mix over here in the UK, but I make corn muffins from scratch quite often. I'm guessing that if I just mix all the dry ingredients for corn muffins together and then use that instead it would work out right. What do you think?

If there's a different substitution that would work, please let me know.

Alterations


I turn up the heat for the last minute or two for a slightly more crunchy exterior, and then eat with cream of mushroom soup. Thanks Mom! ;)


I just made this again, and wanted to add a warning. Whatever you do, don't substitute another brand of corn muffin mix. Ugh!

Also, add one tablespoon of sugar to the mix.
