Carols Chicken And Un-dumpable Dumplings

- 2 pkgs.(7.5oz. each) buttermilk baking mix shopping list
- 2Tbs bacon fat or olive oil shopping list
- 6 fresh carrots,peeled and sliced shopping list
- 4 thick celery stlks,sliced shopping list
- 1/2c sliced green onions shopping list
- 2cloves garlic,peeled and minced shopping list
- 2 cans(8oz each) cream of chicken soup,with equal parts water added shopping list
- 2 cans(8oz.each) cream of celery soup,with equal parts water added shopping list
- 2 bay leaves shopping list
- 2Tbs chopped fresh tarragon shopping list
- 1c peas and/or and pearl onions shopping list
- 2 whole roasted chickens,cut in 8 pieces each shopping list
How to make it
- Prepare biscuit mix according to package directions. Let sit at room temp. while prepping(sodumplings will be fluffier).. In dutch oven or deep por over low heat,cook bacon fat or oil 30 seconds. Add carrots;cook 5 mins. Add celery and green onions. When celery is translcent,add garlic and both soup mixtures.
- Bring mixture to a light boil. Add bay leaves,tarragon,peas and pearl onions. When liquid returns to a boil,using tsp. measure,drop biscuits into liquid. (dough will float to the top)
- Cover tightly with lid;let simmer 15 mins. Take out 1 dumpling to check for doneness(inside will be fluffy). Divide dumplings evenly among 8 bowls. Add 2 pieces of chicken to each. Ladle liquid over chicken and dumplings. Sprinkle with parsley.
