Ingredients
  • 4 chicken breasts, boneless and skinless
  • 8 slices pepper jack cheese
  • 4 Rolls of your choice, toasted
  • 1 tomato, sliced
  • 1 Avocado, sliced
  • Serrano Sauce (post to follow)
  • Marinade
  • 1 cup olive oil
  • 1/4 cup lime juice
  • 1 clove garlic, finely chopped
  • 1/4 cup cilantro, finely chopped ( I do not like cilantro so I use parsley)
  • 1/2 tbls. cumin
  • 1/2 tbls. chili powder
  • 1 tsp. cayenne pepper

Directions
  1. Mix all marinade ingredients together
  2. Put chicken in zip bag with marinade
  3. Marinade for 1 hour
  4. Grill chicken 3-4 minutes each side or until done
  5. Assemble sandwich, roll, chicken, cheese, tomato, avocado, and Serrano Sauce
