How to make it

  • Score fat side of roast in diamonds (cut only 1/4 inch deep).
  • Place whole cloves at intersections of score lines.
  • In a shallow baking dish with a non-metal rack, place roast fat side down.
  • Microwave, uncovered, on high for 5 m inutes.
  • Reduce power to medium; mirowave 25 minutes.
  • If desired, insert microwave thermometer or probe in meatiest portion, not touching fat or bone.
  • Turn roast fat side up.
  • Combine brown sugar, water, wine, and mustard; spread over roast.
  • Microwave on medium 20 to 35 minutes longer or until internal temperature reaches 170 degrees,
  • basting and let stand for 10 minutes.
  • Meanwhile, in a 2-cup measure combine cornstarch, garlic powder, and ginger.
  • Stir in pineapple juice, honey, soy sauce, and vinegar.
  • Microwave, uncovered, on high for 2 to 4 minutes or until thickened and bubbly, stirring every
  • minute.
  • Spoon over roast.
  • Garnish roast with pineapple rings, if desired.
  • Makes 6 servings.
