Hawaiian Pork Roast

- 1 3 1/2 to 4 1/2 pound pork loin center rib roast shopping list
- whole cloves shopping list
- 1 1/2 cups packed brown sugar shopping list
- 2 tablespoons water shopping list
- 1 tablespoon dry whaite wine or dry sherry shopping list
- 1 tablespoon prepared mustard shopping list
- 1 tablespoon cornstarch shopping list
- 1/4 teaspoon garlic powder shopping list
- 1/8 teaspoon ground ginger shopping list
- 2/3 cup unsweetened pineapple juice shopping list
- 3 tablespoons honey shopping list
- 2 tablespoons soy sauce shopping list
- 2 tablespoons red wine vinegar shopping list
- canned pineapple slices (optional) shopping list
How to make it
- Score fat side of roast in diamonds (cut only 1/4 inch deep).
- Place whole cloves at intersections of score lines.
- In a shallow baking dish with a non-metal rack, place roast fat side down.
- Microwave, uncovered, on high for 5 m inutes.
- Reduce power to medium; mirowave 25 minutes.
- If desired, insert microwave thermometer or probe in meatiest portion, not touching fat or bone.
- Turn roast fat side up.
- Combine brown sugar, water, wine, and mustard; spread over roast.
- Microwave on medium 20 to 35 minutes longer or until internal temperature reaches 170 degrees,
- basting and let stand for 10 minutes.
- Meanwhile, in a 2-cup measure combine cornstarch, garlic powder, and ginger.
- Stir in pineapple juice, honey, soy sauce, and vinegar.
- Microwave, uncovered, on high for 2 to 4 minutes or until thickened and bubbly, stirring every
- minute.
- Spoon over roast.
- Garnish roast with pineapple rings, if desired.
- Makes 6 servings.
