Ingredients
  • 6 slices bacon, cut crosswise into eighths
  • 2 to 2 1/2 pounds boneless beef chuck roast, cut into 3/4 inch cubes
  • 1/3 cup all-purpose flour
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons seasoned salt (optional)
  • 1/4 teaspoon dried basil, crushed
  • 1/8 teaspoon garlic powder
  • 1 1/2 cups hot water
  • 1/2 cup dry red wine
  • 2 medium onions, cut into eight wedges
  • 2 cups sliced fresh mushrooms

Directions
  1. In a 3-quart microwavable casserole cook bacon, covered, on high for 6 minutes.
  2. Add beef cubes to casserole pan.
  3. Toss with flour, soy sauce, salt, basil, and garlic powder.
  4. Stir in water, wine, and onions.
  5. Microwave, covered, on high for 5 minutes.
  6. Reduce power to medium heat (50%).
  7. Microwave, uncovoered, 30 minutes, stirring once.
  8. Add mushrooms.
  9. Microwave on medium (50%) for another 35 to 45 minutes or until the beef is tender, stirring once.
  10. Cover and let stand 10 minutes.
  11. Serves 8.
  12. -
  13. NOTE: Beef chuck is better marbled and often less expensive then the round sold as beef stew meat. Small uniform pieces you cut yourself will microwave more evenly and be more tender.
