How to make it

  • Prepare the chestnuts by cutting a small cross on both sides, as this means easy peeling later.
  • Boil for half an hour.
  • Peel and skin the chestnuts.
  • Put the nuts through a sieve or a mouli.
  • Make a syrup by cooking the sugar in the water, adding the vanilla essence.
  • When it thickens, add the crushed chestnuts and cook gently until thick.
  • Put in hot, clean jars, and cover immediately.

    Just made myself two pints of this jam.
    It does taste great, however it took me a couple of hours to prepare them.
    They are in a hot water bath right now. I'm wanting to preserve them for use later on in the year. :)

    I love chestnuts as I ate them all the time as a child because my grandparents had a big chestnut tree in their front yard but I couldn't imagine jam being made out of them. This is interesting!
