Ingredients
  • 2 pounds sweet chestnuts
  • 1 1/2 pounds sugar
  • 3 teaspoons vanilla essence
  • 1/2 pint water

Directions
  1. Prepare the chestnuts by cutting a small cross on both sides, as this means easy peeling later.
  2. Boil for half an hour.
  3. Peel and skin the chestnuts.
  4. Put the nuts through a sieve or a mouli.
  5. Make a syrup by cooking the sugar in the water, adding the vanilla essence.
  6. When it thickens, add the crushed chestnuts and cook gently until thick.
  7. Put in hot, clean jars, and cover immediately.

I love chestnuts as I ate them all the time as a child because my grandparents had a big chestnut tree in their front yard but I couldn't imagine jam being made out of them. This is interesting!
