How to make it

  • Preheat oven to 160c gas 3
  • Melt the chocolate and unsalted butter together, over a pan of simmering water.
  • In a bowl place the eggs, sugar, vanilla, salt and mix well.
  • Slowly add the warm cream to the melted chocolate and butter, then mix well.
  • Add the egg mixture and whisk well.
  • Pour into the prepared pastry shell, then pop into the preheated oven.
  • Cook for 12-15 Min's or until the outside (4cm) of the tart is set, then remove from the oven, and the residual heat will set the flan.
  • Cool and serve at room temperature, with raspberry sauce.
  • To make the sauce, liquidise the raspberries with the sugar and lemon juice. The add enough water to make a thickish sauce.

    We do a similar recipe, but don't put it in a tart shell. Lay a layer of the sauce down and place the chocolate on top. Great post.
