Wonderful Italian cookie

Ingredients
- 1 lb butter
- 3 eggs
- 1 15oz ricotta cheese
- 1 tsp. baking soda
- 2 c. sugar
- 2 tsp. vanilla
- 4 c. flour
- 1 tsp. salt
Directions
- Preheat oven to 350.
- Mix all ingridients, and drop by teaspoon onto ungreased cookie sheet.
- Bake 12-15 minutes.

OMG! I'm so glad you posted these -- I have Ricotta in the fridge I have to use up and these sound amazing!! Of course, I will eat them all--! My border collie, Elizabeth, and I.
