How to make it

  • Fill heavy pot. I use my cast iron skillet full enough of oil to deep fry.
  • Oil should be about 350 degrees F.
  • Cook potatoes in batches. About 2 to 3 minutes.
  • Don't overcrowd because that drops your oil temperature a lot and you get a soggy chip.
  • Drain on paper towels and salt to taste.
