This is a side that could be a salad. Great dish for summer grillingor outtings. Cool and refreshing.

Ingredients
  • 2 lbs cooked shrimp
  • 2 cups fresh or frozen corn kernels (no canned)
  • Marinade
  • 3/4 cup olive oil
  • 3/4 cup tarragon vinnegar
  • 2 tbs Creole or grainy brown mustard
  • 2 tbs finley chopped green onions
  • 3 tbs finely chopped fresh parsley
  • salt, black pepper, Louisiana Hot Sauce to taste

Directions
  1. Combine marinade ingredents. Chill.
  2. About one hour before serving, pour marinade over shrimp and corn, Keep chilled.
