- 2 cups broiled chicken, 1/4" cubes shopping list
- 1/4 cup finely chopped red pepper, optional shopping list
- 1 cup all purpose flour shopping list
- 1 cup yellow corn meal shopping list
- 1/4 cup granulated sugar shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1 cup low fat milk shopping list
- 1/3 cup honey shopping list
- 1/4 cup extra light olive oil shopping list
- 1 large egg shopping list
- Garnish: shopping list
- 3 tbsp honey for drizzling shopping list
- 8 cold butter pats for top shopping list
How to make it
- Using cooking spray, grease either 8 x 8 pan, or 8 ramekins.
- Preheat oven to 400 degrees.
- Place cubed chicken and red pepper in baking dish.
- Mix together all dry ingredients.
- Stir in milk, honey, oil, and egg until all ingredients just moistened.
- Bake 18-20 minutes (12-15 minutes for ramekins), or until wooden pick inserted in center comes out clean.
- Garnish each warm serving with 1 pat butter and drizzled with 1 tsp each of honey.
- Notes: This dish can be kept on counter if made just prior to serving, or stored, tightly covered with plastic wrap in the refrigerator.
- Serve warm from oven or reheat slightly in microwave just prior to serving.
- Leftovers can be frozen, just heat up in microwave and enjoy.
