Sweet Chick Recipe
This cornbread is a great main dish or a great addition to any Southern flavored meal.

Ingredients
  • 2 cups broiled chicken, 1/4" cubes
  • 1/4 cup finely chopped red pepper, optional
  • 1 cup all purpose flour
  • 1 cup yellow corn meal
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup low fat milk
  • 1/3 cup honey
  • 1/4 cup extra light olive oil
  • 1 large egg
  • Garnish:
  • 3 tbsp honey for drizzling
  • 8 cold butter pats for top

Directions
  1. Using cooking spray, grease either 8 x 8 pan, or 8 ramekins.
  2. Preheat oven to 400 degrees.
  3. Place cubed chicken and red pepper in baking dish.
  4. Mix together all dry ingredients.
  5. Stir in milk, honey, oil, and egg until all ingredients just moistened.
  6. Bake 18-20 minutes (12-15 minutes for ramekins), or until wooden pick inserted in center comes out clean.
  7. Garnish each warm serving with 1 pat butter and drizzled with 1 tsp each of honey.
  8. Notes: This dish can be kept on counter if made just prior to serving, or stored, tightly covered with plastic wrap in the refrigerator.
  9. Serve warm from oven or reheat slightly in microwave just prior to serving.
  10. Leftovers can be frozen, just heat up in microwave and enjoy.
