How to make it

  • Put the pasta on to boil.
  • Crush the garlic, put it into a little oil in a frying pan.
  • Slice the bacon into thin strips or 'Lardon style'.
  • Once the oil has heated and the garlic is sizzling, add the bacon - dont shake the pan as this releases the water and boils the bacon, rather than frying it.
  • Once you have crisp, golden bacon, slosh a little bit of white wine into the pan, to 'deglaze it' and infuse all the flavour.
  • Then add about 50mls of cream, and stir alltogether. Simmer for a few minutes, and reduce down.
  • Taste. If salt is needed, add a very small amount, and approx quater a teaspoon of pepper and a dash of lemon.
  • Drain the pasta but not all the way, leave a little bit of water on the pasta so it looks glossy.
  • Add the sauce to the pasta, mix all together and serve.

    Lardon style, is basically cut up into small chunks/strips and if you buy them from a store, they are already fried in garlic.

    Hey.... What is "Lardon Style"??? I would really like to make this recipe, but I'm not quite sure. Sounds delicious-o, however. ;D

    Great recipe! These are the kind of pasta recipes I love. Few, simple ingredients but you know it is going to taste amazing. Great tip on the bacon re shaking the pan. Never knew that but when I think about it my bacon always boils a bit before it gets down to frying and browning! I do use the little bit of pasta water tip -- it helps to make the dish a little bit saucier too! Great, great post. Thank you for sharing!
