The shop "Peanut Butter & Co." in NYC is a great place to indulge my peanut butter cravings. It is a little bit of childhood nostalgia with a touch of adult sophistication. This sandwich is one of my favorites. ilovepeanutbutter.com

Ingredients
  • 3 oz. package of cream cheese, softened
  • 1 tsp vanilla extract
  • 2 T powdered sugar
  • Cinnamon Raisin Swirl Peanut Butter (mail order from Peanut Butter & Co. ...OR... take 1/4 c. natural unsweetened peanut butter--smooth or crunchy, your choice--and add cinnamon and raisins to taste)
  • tart green apple (pippin, granny smith etc.)
  • 2 slices of your favorite sandwich bread (a hearty honey whole wheat works great)

Directions
  1. Blend cream cheese with vanilla and powdered sugar. Spread on one slice of bread.
  2. Spread other slice of bread with Cinnamon Raisin Swirl Peanut Butter.
  3. Slice apple thinly. Lay apple slices onto the sandwich.
  4. Put sandwich together and devour.
  5. It's messy but good... have plenty of napkins handy, and enjoy!
