Chutney Chicken

- 1 cup chopped apple shopping list
- 1/2 cup tomato sauce shopping list
- 1/4 cup of raisins shopping list
- 1/4 cup of packed brown sugar shopping list
- 1/4 cup of chopped red onion shopping list
- 2 tbsp of red wine vinegar shopping list
- 1 tbsp of diced candied lemon peel shopping list
- 1 tbsp of lemon juice shopping list
- 1/3 tsp of salt shopping list
- 1/3 tsp of ground ginger shopping list
- 1/4 tsp of ground cinnamon shopping list
- dash of cloves shopping list
- 3 lb. broiler chicken cut up shopping list
- 1/2 tsp of paprika shopping list
- salt and pepper shopping list
- cooked brown rice shopping list
- chopped green onions shopping list
How to make it
- For chutney: In saucepan, combine apple, tomato sauce, raisins, brown sugar, onion, vinegar, peel, lemon juice and spices.
- Simmer uncovered for 15 minutes.
- While the chutney simmers; fix the chicken.
- Place cut up chicken in 13 x 9 x 2 baking pan. Season lightly with paprika, salt and pepper.
- Bake at 350 degrees for one half hour.
- Drain off accumulated fat from the pan.
- Top with prepared chutney sauce.
- Bake another 30 minutes more, covered.
- Arrange chicken pieces over hot cooked rice (mom used white rice, I prefer brown rice these days.)
- Skim off fat from the pan juices/chutney sauce in baking pan.
- Mix one tbsp of cornstarch with 1/4 cup of cold water and add to pan drippings, heat until bubbly and glossy.
- Spoon thickened sauce over the chicken.
- Garnish with chopped green onions, or chopped parsley if desired.

Love the sound of this! I would use the lemon peel that you use to make fruit cake -- is that correct?
