How to make it

  • For chutney: In saucepan, combine apple, tomato sauce, raisins, brown sugar, onion, vinegar, peel, lemon juice and spices.
  • Simmer uncovered for 15 minutes.
  • While the chutney simmers; fix the chicken.
  • Place cut up chicken in 13 x 9 x 2 baking pan. Season lightly with paprika, salt and pepper.
  • Bake at 350 degrees for one half hour.
  • Drain off accumulated fat from the pan.
  • Top with prepared chutney sauce.
  • Bake another 30 minutes more, covered.
  • Arrange chicken pieces over hot cooked rice (mom used white rice, I prefer brown rice these days.)
  • Skim off fat from the pan juices/chutney sauce in baking pan.
  • Mix one tbsp of cornstarch with 1/4 cup of cold water and add to pan drippings, heat until bubbly and glossy.
  • Spoon thickened sauce over the chicken.
  • Garnish with chopped green onions, or chopped parsley if desired.

    I use candied citron or peel from the health food store. The kind you use for fruit cake, but organic is better with no funny dyes. Thanks for checking out the recipe.
