Ingredients
  • 1/2 cup bourbon
  • 1/2 cupolive oil
  • 3 tblsp reduced sodium soy sauce
  • 4 salmon fillets or steaks(3/4 to 1 ins thick)about 2 lbs

Directions
  1. Preheat oven to 450
  2. line baking pan with foil
  3. in a small bowl, combine bourbon,oil and soy sauce,whisk until blended
  4. place salmon, skin side down in the baking pan
  5. brush with some of the basting mixture
  6. bake,uncovered,basting 2 or three times,for 15 to 20 min
  7. or until fish flakes with a fork
  8. in a small saucepan,bring remaining basting mixture to boil,over med -high heat
  9. reduce the heat and simmer 3 to 4 min
  10. transfer salmon fillets to dinner plates and serve basting mixture on t he side
