How to make it

  • In a med saucepan bring 2 1/2 cups water to boil
  • add chicken,return to boil,and lower heat.
  • simmer until chicken is fork tender and the juices run clear
  • 20 to 30 min
  • when chicken is cool enough to handle,debone and chop into small
  • pieces
  • reserve the broth int he fridge to defat and use later
  • Combine chicken ina bowl with remaining ingredients
  • add enough mayo to make as moist as you desire

    I love chicked salad. I have never had a low fat one.. So i am eager to try this. But I love to add red/purple grapes(cut in half). Thanks

    This looks so good, I'm going to make it today! I'm going to use walnuts vs. pecans. A fun summer alternative would be to add grapes cut in half and then serve in a pita pocket. Mmmmmm
