Ingredients
  • 3 pounds hamburger
  • 1 onion, peeled and chopped
  • salt and pepper to taste
  • 1 can cream of mushroom soup
  • 1 can tomato soup
  • 1 can enchilada sauce
  • 1 can taco sauce
  • 1 can mushrooms (8 oz)
  • 1 1/2 dozen corn tortillas
  • 4 cups grated Cheddar or Monterey Jack cheese

Directions
  1. Brown the beef and onion til all the pink is gone. Season with salt and pepper to taste. Add the cream of mushroom soup, tomato soup, enchilada sauce, taco sauce and mushrooms. Simmer for about 10 minutes. In a large casserole dish, layer tortillas, meat mixture and cheese, making several layers and ending with cheese. Bake at 300 degrees for 1 1/2 to 2 hours. I like to serve this with lettuce, tomato and onion on the top and sometimes even a dollop of sour cream. Refried beans also make a tasty accompaniment.
