Spanish Casserole

- 3 pounds hamburger shopping list
- 1 onion, peeled and chopped shopping list
- salt and pepper to taste shopping list
- 1 can cream of mushroom soup shopping list
- 1 can tomato soup shopping list
- 1 can enchilada sauce shopping list
- 1 can taco sauce shopping list
- 1 can mushrooms (8 oz) shopping list
- 1 1/2 dozen corn tortillas shopping list
- 4 cups grated Cheddar or monterey jack cheese shopping list
How to make it
- Brown the beef and onion til all the pink is gone. Season with salt and pepper to taste. Add the cream of mushroom soup, tomato soup, enchilada sauce, taco sauce and mushrooms. Simmer for about 10 minutes. In a large casserole dish, layer tortillas, meat mixture and cheese, making several layers and ending with cheese. Bake at 300 degrees for 1 1/2 to 2 hours. I like to serve this with lettuce, tomato and onion on the top and sometimes even a dollop of sour cream. Refried beans also make a tasty accompaniment.
