Reminiscent of Pennsylvania Dutch Pepper slaw but this one I got in South Carolina. One of my two favorite coleslaw recipes

Ingredients
  • 2 Bags Tri-color Coleslaw Mix
  • 1 Red Bell Pepper, Finely chopped
  • 1 Green Bell Papper, Finely chopped
  • 1 Cup Sugar
  • 1 Teaspoon Celery Seed
  • 1/2 Cup Onion or less (optional)
  • 1 Cup Cider or Wine Vinegar
  • 1 Teaspoon Dry Mustard
  • 1/2 Cup Canola or Light Salad Oil

Directions
  1. Place and mix together the coleslaw and bell peppers in a large bowl
  2. Pour Sugar all over the top. (Splenda works well too)
  3. Sprinkle Celery Seed over the mixture.
  4. Heat together vinegar, oil and mustard until boiling and pour over the cabbage mixture, melting the sugar.
  5. Toss several times, letting all the coleslaw mix wilt a little in the vinegar and oil.
  6. Refrigerate, covered for several hours or overnight.
  7. Sometimes If I am in a hurry, I just leave the slaw out tossing it often until it cools. It wilts faster. But either way it's good to go in 3 hours .
