Quick And Delicious Carrot Nut Bread Recipe
So quick and easy. So good and delicious. Recipe makes 2 loaves of wonderful carrot bread. Great served with cream cheese, coffee, tea, or milk. Perfect for breakfast.

Ingredients
  • 1 cup sugar
  • 3/4 cup Wesson oil
  • 2 eggs, slightly beaten
  • 1-1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • pinch of salt
  • 1 cup grated raw carrots
  • 1/2 cup chopped nuts

Directions
  1. In large bowl, mix in order given, adding eggs one at a time
  2. Divide batter into 2 bread loaf pans
  3. Bake at 350 degrees for about 40 minutes
  4. Test for doneness with toothpick in center, if toothpick comes out clean, bread is done
  5. Remove from oven, let cool for a few minutes
  6. Turn onto wire rack to cool
  7. When ready to serve, slice the bread

Yummy! Carrot cake/bread is a favorite!


Printed recipe out & began shredding carrots in blender and looked more thoroughly, and no eggs given, but told in directions to add eggs one at a time. I used two. Results OK, but shouldn't the no. of eggs be put in recipe? Anyone who made this & had success, how many did you use?
