Lemon Crumb Bars

- 1 box lemon or yellow cake mix shopping list
- 1/2 cup (1 stick) butter or margarine, softened shopping list
- 1 egg plus 3 egg yolks shopping list
- 2 cups finely crushed saltine crackers shopping list
- 1 (14-oz.) can sweetened condensed milk shopping list
- 1/2 cup Realemon lemon juice from concentrate shopping list
How to make it
- Preheat oven to 350 degrees.
- In a large bowl, beat cake mix, margarine and 1 egg with mixer until crumbly.
- Stir in saltine crumbs.
- Reserving 2 cups crumb mixture, press remaining crumbs on bottom of a greased 13x9-in pan.
- Bake 20 minutes.
- With mixer or wire whisk, beat 3 egg yolks, sweetened condensed milk and lemon juice.
- Spread over prepared crust.
- Top with reserved crumb mixture.
- Bake 25 mins. or until set.
- Cool; cut into bars.
- Store covered in refrigerator.
