Sauteed Tournedos Of Beef Caramelized Onion And Mushroom Pan Sauce Recipe
I love love LOVE this dish. It pairs up perfect with Sauteed Spinach and Parmesan Risotto.

Ingredients
  • 1 6oz. Beef Filet
  • 1 oz. nutural oil
  • 1 oz. Gorgonzola cheese
  • 8 oz. veal stock
  • 2 oz. red wine
  • 2 oz. caramelized onion
  • 2 oz. sliced cremini mushrooms
  • 1 t. chopped thyme
  • 1 T butter, chilled, and cubed

Directions
  1. In a small pot, reduce veal stock by half
  2. Season both sides of beef filet
  3. Heat small pan with oil
  4. Sear beef on both sides
  5. Top with cheese and finish in oven to desired temperature
  6. Sweat mushrooms and onions in another saute pan
  7. Deglaze with wine, au sec
  8. Add reduced veal stock
  9. Reduce to nappe
  10. Add thyme, check seasonings, monte au beurre.
  11. Once the beef filet is done, plate it, and top it with the mushrooms, onion, and sauce.
