How to make it

  • In a small pot, reduce veal stock by half
  • Season both sides of beef filet
  • Heat small pan with oil
  • Sear beef on both sides
  • Top with cheese and finish in oven to desired temperature
  • Sweat mushrooms and onions in another saute pan
  • Deglaze with wine, au sec
  • Add reduced veal stock
  • Reduce to nappe
  • Add thyme, check seasonings, monte au beurre.
  • Once the beef filet is done, plate it, and top it with the mushrooms, onion, and sauce.
  • Devour
