Sauteed Tournedos of Beef Caramelized Onion and Mushroom Pan Sauce

- 1 6oz. beef Filet shopping list
- 1 oz. nutural oil shopping list
- 1 oz. gorgonzola cheese shopping list
- 8 oz. veal stock shopping list
- 2 oz. red wine shopping list
- 2 oz. caramelized onion shopping list
- 2 oz. sliced cremini mushrooms shopping list
- 1 t. chopped thyme shopping list
- 1 T butter, chilled, and cubed shopping list
How to make it
- In a small pot, reduce veal stock by half
- Season both sides of beef filet
- Heat small pan with oil
- Sear beef on both sides
- Top with cheese and finish in oven to desired temperature
- Sweat mushrooms and onions in another saute pan
- Deglaze with wine, au sec
- Add reduced veal stock
- Reduce to nappe
- Add thyme, check seasonings, monte au beurre.
- Once the beef filet is done, plate it, and top it with the mushrooms, onion, and sauce.
